Many hours of work are necessary to be able to harvest top-quality winegrapes. Every spring and summer, we manually remove the leaves that are blocking the sunlight from reaching the clusters. We also employ a technique known as "green harvest" (the process of cutting off excess grapes to limit yields). This results in low quantities and high quality. When it comes to quality wines, we are content with a relatively small quantity of 4,000 l per hectare. In the case of our Prädikat wines we are happy about a much smaller quanitity . We pick the grapes as late as possible to make sure that they have reached an ideal state of maturity. If necessary, we harvest the grapes in two stages. The selection of ripe, healthy grapes guarantees that our wines have fully developed aromas. |
